This Friday, The Rocks invites guests on a culinary journey through France—without ever leaving the shores of VOMO.
Inspired by the timeless traditions of French cuisine, our newest degustation menu celebrates classic technique, exceptional ingredients and thoughtful storytelling, all brought together with the relaxed elegance that defines dining on our private island.
French cuisine has long been regarded as the foundation of modern cooking, influencing chefs and restaurants across the world. For Executive Chef Ajay, that heritage is what makes this menu especially meaningful.
“French cuisine is one of the foundations of modern cooking and has influenced chefs around the world,” he explains.
“I admire the attention to technique, balance of flavours and respect for quality ingredients. French cooking celebrates both simplicity and refinement, allowing each ingredient to shine while creating memorable dining experiences.”
Having worked alongside French chefs during his time in the Maldives, Chef Ajay has experienced these traditions firsthand. That experience has shaped a menu that remains true to French culinary principles while embracing the freshness and relaxed beauty of island dining.
The evening begins with elegant starters that showcase the richness and diversity of French cooking. Guests can enjoy dishes including delicate Wagyu Tartare with cured egg yolk and black truffle, luxurious Moules Noires served with lobster bisque crème and parmesan espuma, or lavender and honey smoked duck breast balanced with a vibrant blood orange gastrique. Vegetarian diners are equally celebrated with the classic Salade de Chèvre Chaud, where warm herb-crusted goat’s cheese meets fresh pear, walnuts and crisp seasonal leaves.
Before the main course, a refreshing lime and VOMO basil sorbet provides a palate-cleansing interlude. Made with basil grown in our own island gardens, it’s a small reminder that even while travelling through France, the spirit of VOMO is never far away.
For Chef Ajay, one dish perfectly captures the balance of elegance and freshness that defines the menu.
“My personal favourite is the Murray Cod,” he says.
“It highlights the elegance of French cuisine while incorporating fresh coastal flavours. The combination of Murray cod loin, sea herbs, baby fennel, orange segments, light chorizo crème and black garlic creates a balanced dish with delicate texture, freshness and depth of flavour.”
Alongside the Murray Cod, guests can choose from indulgent truffle-crusted veal with classic Périgourdine sauce, beautifully roasted quail prepared three ways, or a vibrant heirloom tomato tart finished with creamy burrata.
Dessert continues the journey with refined French classics, from red wine poached pear with hibiscus and almond crumble to delicate coffee choux pastry topped with crisp craquelin and coffee caramel.
